James is the co-owner of and head butcher at London’s much-respected Turner & George artisan meat merchants. He and his fellow founder, Richard H Turner, executive chef at Hawksmoor, operate out of a Victorian-era shop, restored to its former glory back in 2013, in bustling Clerkenwell. They sell high-quality British native-breed meats; use traditional cutting techniques and seam butchery; make their own sausages, burgers, pies and gravies; and infuse all of this with a knowledge of contemporary cooking.
Their wares are meticulously sourced from animals raised naturally and happily, making them the suppliers of choice for Hawksmoor and Selfridges Food Hall, and a haven for enthusiasts, who buy both online and over the counter. Passionate about his trade, which he learnt at the historic wholesale Smithfield Market where his father has worked for more than 60 years, James runs in-store workshops to share his skills.
